How do you create your very own special mixed salad? Salad can be many things in a meal. In most cases, it is a starter. In others where it is fortified by smoked or roast chicken, meat or sea food, it can constitute a meal in itself. As fruit salad, it can even take the place of dessert. Salad can be kept dry and boring or it can be creative enough to be the piece de resistance of a meal. Coming back to my own salad, I have no fixed recipe. My favourite leafy vegetable is ice berg lettuce. I try to male it the basis of all my salads. I can add to it whatever vegetables are in season, taking care to vary the combination every day. It is fun to vary the texture of the vegetables, keeping some uncooked while steaming, roasting or sauteing others. Another good idea is to vary the shape of the vegetables; for instance you could slice the carrots on the diagonal one day , grate them or julienne them another time. I used to love creamy dressings like mayonnaise and Thousand Island sauce but now I steer clear of them since they are high calorie. I use extra virgin olive oil instead.

Are you a list maker and item ticker or a just do it and go with the flow of the day person type? I am a compulsive list maker; I don’t think I can function without a list. But sometimes a long list can be a cause of stress. I once wrote a post about this, How to keep your to-do list short and still be insanely productive.

Does this mean letting go of al stress ? If so, then only a couple of weeks ago I met my three closest friends over coffee and a long natter. It was a lot of fun! |
